Camel­lia sinen­sis (aka tea) One plant makes all the vari­eties of what we know as tea.  Black, green, white, the whole spec­trum of oolong and pu’erh teas are all made from the same plant leaves.

The vari­a­tions of tea are all influ­enced by sev­eral fac­tors.  Each region where camel­lia sinen­sis where grows imparts dif­fer­ent fla­vors and char­ac­ter­is­tics.  For exam­ple, Assam tea can only be grown in the Assam region of India.  Every attempt to grow it else­where loses the dis­tinc­tive char­ac­ter­is­tics of the tra­di­tional Assam tea. Also, the method and length of dry­ing time for the leaves changes the fla­vor, tex­ture and in some cases med­i­c­i­nal uses of the end product.

VARIETIES OF TEA

White tea is typ­i­cally air-dried with lit­tle fer­ment­ing.  This leaves a fresh, clean tast­ing tea which can be a won­der­ful basis add other flavors.

Green teas are also dried with lim­ited oxidation

What could possibly make #tea better?

The first time I drank tea made by Teaguys I was amazed at the bold com­bi­na­tions they offered.  Cracked cof­fee beans with black tea and spices, maple syrup and tea, whole chunks of dehy­drated fruits and flower petals.  The appear­ance of their teas pull you in. You just have to know how it tastes. And they cer­tainly deliver on the taste.

I am what I would affec­tion­ately call a “tea snob”.  Much as there are those who won’t eat meat or have a pas­sion for wine I like good tea.  As you can see from this jammed cup­board in my kitchen, I col­lect teas just about every time I enter a store.  Tea from a tea bag rarely sees the inside of my tea cup with a few excep­tions.  The rea­son being, most tea bags are filled with the dregs and left­overs of the tea indus­try pro­cess­ing and pack­ag­ing their whole leaf teas for peo­ple such as myself.  “The dust left on the floor” as a good friend so aptly put it.

The large tea leaves unfurl­ing in my tea pot releas­ing their good­ness into the water is a com­plete thrill.  Fine teas are hand processed to pre­serve the sen­su­ous qual­i­ties a good tea imparts.  For many years I
